I don't zero at 100 because my eyes aren't sharp enough anymore (despite testing 20/15) to really see the zero target anymore.4

Lots of .mil guy will chime in with training scars of 25M (Army/Air Force) and 36M (USMC), but I don't think those are useful unless you NEED to be able to engage point targets out to 250-300M regularly - and both give more "parabolic" zeros than 50 yards/meters.
With my eyes I'm not going to be shooting a Dot past 75 or 100 yards/meters max at this point of life :-/

Well I suppose that might change if I ever put a magnifier on it, but wasn't planning that currently.

With the 510 the ring is 65MOA in diameter, which means the hash mark at the bottom of the ring is your zero at 7 yards. So at short ranges you can snap to the bottom of the ring for a quick/accurate shot, to account for the mechanical offset.
Yeah I remembered that benefit/trick from previous thread here I should have bookmarked. Part of the reason I picked this setup was because of that. Since only serious use this gun will see is HD situation where have time/need for more than CCW handguns.

Used to rely on shotgun for HD supplement to handguns but can't take the recoil of shotguns to practice enough anymore.

It's also lot easier for gf to remember to use that aiming point for close range shootings, as default we can just practice at the range vs remembering conscious offset. It made instant sense to her.

Does that technique work best with 50/200 zero? Or not significant difference inside 7 yards?

At every short ranges it works with most of the common zero methods.

Just mounted a 510C myself and went with a 50/200 yard zero—super flat trajectory and easy to dial in. The open emitter’s been fine for range days, but I get why folks prefer the sealed AEMS for duty/HD use—less chance of dirt or moisture issues. If you’re sticking with the 510C, remember that lower ring hash at 7 yards is handy for close work. For what you described, I’d say 50-yard zero is the sweet spot.
