The answer to your question is because they have progressed out of their immature and childish way of thinking that all things in life are black and white and there is no grey.
They are adult enough to understand how the legal system works, what roles each player fills and to understand why it works the way that it does. They also have the integrity to do the job that they signed up for no mater how abhorrent they find it. This is what mature adults do.
This F. Scott Fitzgerald quote comes to mind, "the test of a first-rate intelligence is the ability to hold two opposed ideas in the mind at the same time, and still retain the ability to function."
