Fort Knox M1 (special order from C.E. Safes) or basically anything by AMSEC or Sturdy.

Security costs money. There's no way around that. Plate steel is expensive (in terms of both materiel and labor), which is why even most of Fort Knox safes use low quality sheet steel doors with low quality fit.

Trust me, after watching the below video, I know security don’t come cheap. That’s why I just wanted a few examples of just on the other side of that line that separate a descent safe from just a cheap cabinet.

Although no experience, a modular safe like zanotti (mentioned above) could be an interesting option between a cabinet and "real" safe.
