I shot bullseye for a long time and I think the G41 for what you've described should be fine.
In the long term, the two areas where I think the G41 might be suboptimal is probably the weight and the slide. Rapid and Timed series are all about cadence and consistent recoil control. A heavy steel framed gun with light loads will be easier to control than a lighter polymer gun.
A more serious drawback for the Glock comes in the slide. Formal bullseye shooting lets you use a red dot - The Ultradot Match Dot 2 is by far the most popular when I was shooting - but this will be hard to mount to the slide.
From what you've described, though, it seems doubtful that this will matter since your matches are not the exact Bullseye ruleset. But if you get hooked and want to get more serious about it, then these are all considerations to have in mind.
I put the Dawson's adjustable sights put on. Great sight picture. Installed wolff 5# striker spring and reduced used firing pin block spring. Pretty good trigger. My cheap pull guage say about 4 1/2 pounds. Dry firing a lot.
I bought some 185 grain swc, working up some loads.
See how it goes. I might fall back to my revolver until I get a good load worked out.

My late wife shot her 21 in club bullseye matches with good effect; I was loading 200g SWCs for her. I think you’re on the right track with the new sights - I had adjustable Dawsons on mine for awhile, and while I went back to my usual Hacks they were good sights.
My 41 is capable of far outshooting me. There’s something about .45 ACP in Glocks, they tend to have really good inherent accuracy.

Ten yards Sellier & Bellot 230 grain FMJ. Ten rounds.
Slow fire 2 hand. Your copy should do as well or better.
Try the S&B.
