I’ve looked, and looked. Were they held up or something?

In my experience, it seems like H&K releases guns in batches. They'll make a run of a particular model, and distributors will be stocked up for a while, then they'll gradual get scarce until the next batch. There have been several times where my hankering for a particular H&K did not coincide with availability. Invariably they'll be back in stock within a few months.
EuroOptic is usually an excellent source.
Not the LE version but here’s one.

Per HK-USA, shipments come in quarterly, with varying amounts of the different models. This makes it feast or famine for HK pistols. I ran into this problem when I was trying to acquire back-up P30L V1s.

They seem overpriced to me though, so I would wait until the next batch hits the market. If you're patient, you can find H&Ks at really good prices. I have a P30 and a P30SK, each of which cost me less than $500 new. Seems like you should be able to find a VP9-B for close to $500 if you're willing to wait 2-3 months.
If buying an HK, I always cal Mike at Cross Creek Guns to see what he can get. He has saved me lots of money on HK’s.
@GJM has them all ;-)
