    Kitchen Knives

    Not really edged dedicated as weapons but interesting.

    We do have in the kitchen some significant classic chef's knives and Chinese cooking knives which are pretty fierce.

    Best knife is Global G-2 Chef’s Knife 8” .

    If you want one for 1/10 the price. Kai for Williams-Sonoma Santoku Knife

    Murray Carter, (ABS Master Smith), "Muteki". Forged, laminated Hitachi white steel blades.

    I purchased these from Murray more than 15 years ago while he was still living and working in Japan.

    These knives are made entirely by Murray, some years before he had journeymen helping with the Muteki line.

    Hmm I wonder how they came to recommend a Global. For a common chef knife you can get any were I guess they shall suffice. Most chefs are not knife people and just use what is told to them from culinary school.


    They are a decent knife for the money but my Japanese gyutos will easily outperform a Global.

    We've been playing with Shun recently.
    Beautiful. Reasonable price point. Sharp.
    My fingers are not petite enough for Japanese knives, apparently.

    I frequently see Wusthof as number two on reviews. Number one always changes, from Global, to Victorinox, etc. etc. etc. I don't care if it is Update international, Dexter Russell, etc. It isn't the knife that makes the chef.

    I have had lovely Shuns (a pf member has them now). I could not stop my wife from putting them in the dishwasher. I now use Kai commercial and pitch them when they get shabby.

    I love my set of Shun steak knives, but I purchased 2 spyderco kitchen knives and have been impressed with the quality and edge retention. I even find myself favoring the smaller of the two when I’m prepping meat for the bbq pit.
