    I use upside-down grillgrates as a griddle on my Weber propane, and we have a dedicated portable griddle for the camper. I love cooking on both. Can't really do eggs on the grillgrates due to the holes (they run through) but just about anything else is doable.

    I've become a big fan of Avocado oil for griddling too. It *does* impart a flavor, which some don't like, but I'm a fan of that added tweak as well.

    Chicken quarters on the Treager.
    One dusted with Trader Joe's BBQ, the other with a spice my daughter gave me called "finger lickin kickin chicken".

    350° for an hour and a half.
    Hickory and oak blend.

    I am a huge fan of the outdoor griddle. I loved my 36 inch Blackstone although the griddle didn’t heat evenly. Being able to roll a double batch of pancakes in a go is amazing. You can also roll 3 or 4 dishes and clean up with a scrape of the griddle.

    Looking at a 48 inch Camp Chef for the new house.

    I'm going to Costco tomorrow and while I'm there I'll be buying a rack of beef ribs. Never smoked those but I bet I can do it justice. I've smoked 15 lbs of salmon so far this summer. Not sure what BBQ sauce I'll use. Whatever we have on hand will probably work. We have a local market that smokes beef and pork every week but I need to try this for myself.

    I'll be using this charcoal smoker that I repaired. The lid was removed so we could repair it. Weighs about 300 lbs. I have dried alder poached from my neighbors lot that should work. I live off of the land. Yours if you don't live on it. Seven acres and I've only seen one human on it in 23 years. He didn't own it because I know who owns it, just posing as the owners agent.

    I’ve taken to keeping notes so that I can replicate good batches and avoid repeating errors. Up early today so taking time to make a plan.
