    Andrew Zimmern's Wild Game Kitchen on Tastemade, channel 235 on DirectTV. Recipes and some vids on the Tastemade website. Even if you are not into wild game, he cooks almost all his dishes, main and side, outdoors over open fire. So substitute wild boar for pork, and elk for beef. I have lost HOURS of sleep taking notes.

    Did beef flanken and pork baby back ribs “burnt end” style yesterday. So fricken good.

    Rubbed



    On the smoke oven at 225° with smoke tube


    Flip


    Into the pan go the pork ribs


    Into the pan go the beef ribs


    After an hour at 275°, back on the tack at 200° for ten min to tack up


    Served up!


    With sides (awesome Cole slaw and 3xingredient Mac and cheese from kenji)


    Great beverage and good smoke ring on beef rib.

    Word of caution on these generically.... They will melt (literally) if they get caught in your searing if things get flamey... I've killed a few wired probes as well, but, harder to do that with wired. I stick to using my wireless for the smoker. YMMV.

    I have a Meater, similar concept.

    if it's like the Meater then (a) be aware that it could be Bluetooth only (I have a Meater Block that overcomes this) and (b) they typically need to be kept clean in order to charge (and may have a few other quirks to figure out).

    I like my Meater Block, nowt that I have it mostly figured out.

    I just assumed they could handle grill use. I may take a pass on it, then. Thanks for the info!
