    I was drinking some La Cumbre Malpais Stout 7.5 ABV and reading Shadow Divers. Both are outstanding.
    Just a dog chauffeur that used to hold the dumb end of the leash.

    Speaking of kilts, I picked up "Old Chub" from Oskar Blues today at the grocery.

    I never really thought about it, but my partner's name was Oscar. Apropos...as the brewery is only four miles away from Blues.

    There's nothing civil about this war.

    My first attempt at a Bourbon Stout. At first I was disappointed as the result lacked...well ANY carbonation. I roused the bottles and let them sit 3 more weeks at a slightly higher temp. That did the trick.
    Working diligently to enlarge my group size.

    The upper picture is the same batch? It looks like rousing it worked well.

    Yep. Same batch. About 3 weeks apart. I had the same issue with an Irish Red. I’m too impatient I guess. It surprised me in that the fermentation on the stout was VIOLENT. At one point (at about Day#2) I honestly thought the airlock might become dislodged. I thought there would be plenty of oomph left in the yeast at bottling. I guess there was...I just needed to wait.

    So far, I’ve done an American Style Ale, two different types of Irish Red, two types of Coffee Porter, and this Stout. All have turned out pretty good with the exception of the American Ale...ok, but a bit “hoppier” than I like. Next up will be a German style lager or maybe a Helles.

    I’m still playing with liquid malt extract. I don’t have the equipment for full grain, and not sure it’s worth the investment at this point.
