A friend gave us several 2-pound rolls of 50/50 ground venison and wild pig. Makes AMAZING chili.

Ms. Okie's mom has a brisket recipe that calls for dousing it in salsa, then baking until tender. She made it recently but overcooked it, so I sliced the meat into bite-sized pieces, then reduced the pot liquor, then put the meat back in and let it simmer for a while.
That's not far from the classic Texas chili recipe, which is beef with chiles and nothing else.
