Many places where you eat with chopsticks were "small plate" before small plate was cool. You get many small courses, usually only a few bites, before the plate for the course gets cleared away.

Some chopsticks are round, and can roll on the table and the small end goes in your mouth, while the large end can be used to serve from a communal plate.

Several cultures consider it very rude to stick the sticks into the food (like a bowl of rice) and leave them there for any length of time.

Most Americans' experience is very limited and even regular ethnic food eaters aren't exposed the cultural aspects of their use.

When I went to Japan everyone wanted me to bring them back a sushi set. Every one I saw, from $30 to over $1000 came with chopstick rests.
