I’m a big fan of smoked turkey (Mad Max Turkey and Gravy style). But this year given the cost of birds at our local grocery store, my turkey looks a lot like an eleven pound pork butt. It’s been on the smoker since 4:00 pm yesterday. I think the left over sammies will be better than ever.

We’re roasting a chicken, which is perfect for the fact that it’s just my wife and I and my brother visiting from Chicago. But in years where we had more siblings, we still just did two chickens.

Turkey can be done well, but it’s a huge pain. Roasting a chicken is as simple as salting 24 hours ahead, covering in more salt and either oil or melted butter right before, throwing some split garlic heads and lemon at it, and putting it the oven with a vegetable medley underneath it to get cooked in the fat.

With a good mature and air chilled bird, it beats your run of the mill oven roasted turkey handily, every time.

IIRC, the turkeys were $2.17/lb. for a frozen bird at the local Wegman’s. I’m sure I could have found a better deal. But since I’m the only one in the family who enjoys turkey, why bother.
The pork butt smoked for 21 hours and was so tender it fell apart as I was taking it off the smoker. Got to go eat!
