So I got a couple of Lodge skillets for a housewarming gift last summer. After about six months of trials and only a few errors, I think I found the secret.
You need to cook stuff at a MUCH MUCH lower temperature than you are used to. Like I fry eggs with the burner set on "2". Once you see the oil in the pan begin to smoke a bit, you need to turn it down and try to maintain the temp right around there for 99% of the things you are going to cook.
Looking to try some oven cooked steaks again this weekend. My first attempt was, not so good...
I use a DA sander and go for a finer finish. Older pans were finished, I don't think newer ones are.
I use 220 grit and go till the surface looks satin. Takes about 5 min. Then throw it on the Kamodo and let it cook for a few hours, applying flax oil every 45min or so until jet black.

Some of those prices for that hipster designer type cast iron is a little much. It’s just cast iron.
It comes down to the surface smoothness. Some pans are smoother then others. It is very simple to correct.
