Nevermind. Had some thoughts, but couldn't express them without seeming like a dick.

Looks great! Also, check out Alton Brown's Scrap Iron Chef episode.

I like smoked bellies, whether cold, cool, or hot smoked.

I have used the above recipe a couple times and have been pleased with the result. It might be a little sweet for some people but, personally, I think it is a good combo of salt and sweet.

Previously I used a cure put out by another YouTube BBQ chef. I followed his measurements and cure time but it was the saltiest trash I've ever tried to eat. It was like taking a swig of sea water. Just terrible!

I have another more traditional salt cure out of a cook book that I'll try next. It is salt, white sugar and a tiny amount of curing salt.
