What's the largest (longest and widest) 1911 safety out there that's off the shelf?

EGW, Harrison And Wilson Combat all make wide and extended thumb safeties. Are you concerned with hundredths of an inch? Most the time the consideration is the shape/profile as compared with what kind of look your going for vs the absolute largest (by the numbers).

Instead of going super wide, have you considered shields? I have half-shield thumb safeties on a few of mine. They're made by Double-Tap Sports and seem to be a happy medium between huge extensions and sky-scraper Swensons.

Shields were an oversight. I was comparing my Shadow 2's to my Colt CCU and couldn't figure out why I dug the Shadow so much and just blew right past the shields. That should be the ticket.

Stupid question, but what's the point of the shield?

Keeps your thumb from rubbing against the slide.
