Do yourself a favor and upgrade the kitchen blades. I love this new Spyderco. It makes life so much better when slicing those tomatoes. This model is not very much money but it is way better than the cheap stuff I’ve been using for years.

A set of forged, laminated steel blades by ABS master smith Murray Carter which I purchased back in the 1990's while he was still living and working in Japan where he had studied under their masters.

Cheap garbage blades that I don't worry about when my wife throws them in the dishwasher, no matter how many times I ask her not to.

What type of blade style is good for slicing raw meat? Like for jerky? I'm needing a good knife for that.

I have heard really good things about the Victorinox - Forschner 3-knife set (https://www.amazon.com/Victorinox-46892-Fibrox-3-Piece-Chefs/dp/B0000CF99O/ref=sr_1_51?ie=UTF8&qid=1471628303&sr=8-51&keywords=victorinox+forschner). I'm planning on buying a pair of those once my girlfriend and I finish paying off the furniture we just bought. Reviews suggest they are a great value without breaking the bank.

I am a Victorinox fan, bought individual knives rather a set, but they are really unbeatable for the price. I still want to upgrade to something better looking eventually, but am very happy with their performance.

In the past, (it's been a few years), I had good luck with some inexpensive Tramontina knives. Took and held a good edge. Worth a look if you don't want to spend a bundle. Look for higher carbon content and Rockwell hardness when comparing.

While I'm a fan of Victorinox for the Swiss Army Knives, I was underwhelmed with the edge holding of their paring knives. I've not tried their chef knives.

Good utility knives for the kitchen can also be had from Opinel at very reasonable cost.

Somebody gave us a set of Tramontina for our wedding. Handles weren't very ergonomic, so I worked them over, and convex ground the inexplicably hollow ground chefs knife.

Have some custom stuff, too, but mostly have the kids use the Tramontina. Got a couple of Henckels, too, but they hide in a drawer and nobody uses them but me.

I use Wusthof Classic. They're excellent. Very slightly overrated/overpriced, as mine are starting to look a little dingy after only 3-4 years, but I do cook a lot and they still cut well, so I have no heartburn about it.

Their smaller knives, paring and 3-4 utility, particularly shine. Balance, weight, and sharpness are superb. I often use the smaller knives for jobs that should probably be handled by larger ones just because they're so damn handy.

Their Santoku is also really, really good.

I take back the overrated thing. I wish they were aging better, but they're real nice.

I have the chef's knife. It really is a great value. I have a much more expensive chef's knife that I use on occasion, but the Victorinox is a solid every day knife.

A variety here. Old 70s/80s Wusthof, 1940s/50s Sword in Shield-Solingen carbon blades, a Global paring knife ( fantastic blades, those, and beautifully balanced) and a ratty old Chicago Cutlery 10" Chef's knife that gets more use than its quality would indicate.

I have heard nothing but good about the Victorinox kitchen knives. apparently the Fibrox series stands up to really hard use and keeps a respectable edge.
I bought a couple of Global and Russell (now Dexter-Russell) knives for my pop a while back that he and my mom just love. He is a sharpness fanatic and both of those knife brands really hit that mark.

I bought a J A henckels international three piece classic starter set off amazon for 99 bucks last year. I have been really pleased how well they cut and sharpen. They were a big improvement over what I had and good knives do make cooking more enjoyable
